Thursday's Thrifty Meal Idea:Pork Carnitas that will have them begging for more!

ThriftyGuy and I know how dinner time during the week can be hectic and stressful.  You want something delicious, quick, easy, healthy, and cheap.  We all know how that can be a tall order to fill.  That's why we like to share great meal ideas to help get dinner on the table in no-time flat, while keeping it delicious, healthy, and wallet friendly.

There's this little place in Jacksonville Beach, Florida with the most amazing food.  Seriously.  And if you have ever had the honor of frequenting TacoLu's, then you know what I'm talking about!  Ever since I tried their Carne Asada Tacos and Pork Carnitas, I have been a smitten kitten, trying to repeat the recipe (as I live like what, 8 hours away from them and don't think they will be delivering to Raleigh anytime soon, lol.)

After a few botched trials, I found a scrumptious carnita recipe.  By no means am I claiming to be TacoLu caliber, but it is up there in delicious-ness (if that's not an official word, I think I just coined it, lol.)  Trust me... we ran out of tortillas and found ourselves mixing the meat with sour cream and eating it out of a bowl, lol.  Now that's a good sign of some seriously good food!  And best of all?  It's a slow cooker recipe, so it's super simple and doesn't heat up the whole house!  Bonus!

Tuesday's Tip:Convenience isn't always, well, convenient.

A Sunday or two ago I woke up and stumbled downstairs, as per my usual routine, to see what ThriftyGuy and the ThriftyDogs were up to (those early risers!) and to, of course, check out the Sunday deals. ThriftyGuy, being the stellar hubby he is, offered to make breakfast. And before I could think about it, a familiar request escaped my lips; "I want pancakes!"

As he was shuffling around the kitchen and I was trying my best just to be alive, I heard a groan, "Oh man! We don't have any pancake mix!" Now normally I would either do two things at this point: (1) Eat something else (an obvious choice) or (2) run to the store if it were an absolute, have-to-have it necessity.

Within seconds, he had located a simple homemade recipe for pancakes and started making them, to which I replied, "Babe, it's really ok. Don't go to all that trouble." Thing was, it actually was so quick and easy it shocked us both. All were ingredients we had in the house. It was just as fast as the pre-mixed stuff (maybe one minute longer. Seriously, one.) And of course, it was wayyyyy cheaper than the boxed stuff. The end results? Delicious!  We later tried it with some fresh strawberries and blueberries, which made it simply devine!

So, lesson learned? Convenience foods aren't always so convenient. They can be pricey, with boxes of pancake mix costing upwards of $4 (and even if you land a deal, they can be few and far between!) Now we have the recipe bookmarked on our favorites and just keep the bare essentials stocked in the house. Easy, delicious, simple, thrifty, and, oh yeah, convenient. : )
