Flank Steak w/ Spicy Lemon Sauce

ThriftyGuy and I know how dinner time during the week can be hectic and stressful. You want something delicious, quick, easy, healthy, and cheap. We all know how that can be a tall order to fill. That's why we like to share great meal ideas to help get dinner on the table in no-time flat, while keeping it delicious, healthy, and wallet friendly.

Today's recipe made me scrunch up my nose and kind of wonder when it came to the sauce, but let me tell you what - it's delicious! And I can honestly say that I've never had anything like it - it's truly unique - and would definitely make it again! While it is filling, you can break up all the meaty-ness with a simple tossed salad or some steamed veggies for a quick and tasty side. Hope you like it!
Oh - and P.S. - the sauce isn't really that spicy. In fact, it's just the right amount of flavor from the horseradish if you ask us. However, if you are super sensitive to heat, you may want to taste as you go when adding the horseradish! Just a little heads up - enjoy!
Flank Steak with Spicy Lemon Sauce
Serves: 4
Prep: 5 min.
Cook: 10-15 min.
Ingredients:
1 lb. flank steak, trimmed
1/2 tsp. salt
1/2 tsp. pepper
1/4 C. low-fat sour cream
3 Tbsp. horseradish
1 Tbsp. mayo
1 tsp. Dijon mustard
1/2 tsp. grated lemon rind
1 Tbsp. fresh lemon juice
2 Tbsp. fresh chives, chopped
1 Tbsp fresh parsley, chopped
Cooking spray
Instructions:
1. Heat a large skillet over medium-high heat. Sprinkle both sides of steak with salt and pepper. Coat pan with cooking spray. Add steak to pan; cook 5 minutes on each side or until desired degree of doneness. Place steak on cutting board; let stand 5 minutes. Cut steak diagonally across grain into thin slices.
2. While steak cooks: Combine sour cream and next 5 ingredients (through juice) in a small bowl, stirring with a whisk. Stir in chives and parsley. Serve sour cream mixture with steak. Enjoy!

As many of you know, I have reviewed a bunch of jewelry on ThriftyGrl.... all different types, prices, you name it. What girl doesn't love to jazz up an outfit with a nice piece of jewelry?!
I recently was asked to review Primo Jewels. It's an online jewelry store that features designer inspired jewelry at affordable prices. So basically, costume and faux jewelry that look great for an even better price!
When looking through their online store, I couldn't help but notice a difference. This jewelry was different. Unique in a sense that I had never seen anything like it. Which I like. How cool is it to wear something that none of your friends are wearing (or have never even seen before)? And it seemed to be very high quality for costume jewelry; which meant that it was affordable yet eye catching. Right up my alley!
I chose to review the Two-Tone Pearl Necklace. It caught my eye because it is different than what I would normally go for. And when I received it, it was evident that I was absolutely right. This piece was heavy, thick, and seemed very high quality for being costume jewelry. (I wouldn't have known the difference!) I liked that I had never come across anything like it before; the necklace is silver with bits gold strewn in, accented by a pearl at the bottom. The chain is thick and more than sufficient, yet easy to hook (which I can appreciate). When I read the hand written note from the store owner, I could tell how passionate she is about making each piece unique. It was relayed in both her message as well as her jewelry, which speaks for itself.

However, during super doubles, they will double coupons with a face value up to $1.98!! The limit still remains that they will double twenty coupons per household per day per VIC card (and yes they track it from store to store). Do note that you can still use more coupons, but they will be redeemed at face value.
Super Doubles is a great way to clear out your high value coupons (with a face value from $1 - $1.98). However, don't let this fool you. Be sure to bring your entire coupon book for reference, as many times lower valued coupons pair with items to make for some great (undercover) deals as well!

Saving on gas in today's economy!

No one can argue the fact that times are financially tough right now, especially with no end in site to the ever-rising gas prices. Be sure to get the most bang for your buck with these following suggestions:
Have a great tip on saving money on gas? Feel free to leave a comment and share with everyone - we'd love to hear it!
Save your errands for one trip. That way you won't have to go out and about each day. When you do go out, use a route planner to help you quickly map the quickest way to get to all of your destinations. This is both a great time and money saver! Click here for one of these great tools!Gas prices seem to be going higher and higher without any relief in site. And unfortunately it's a necessity that most of us can't do without. Hopefully by limiting your driving and using the tips above, you can save money and still afford to put dinner on the table!
It may take a minute of your time, but you can really save some money by either checking the Internet or your smart phone for the cheapest local gas prices before heading out. I personally like Gas Buddy, but there are tons of other great sites to use!
Do things that help you cut the need for unnecessary driving:
Be sure to do all of the obvious things that experts insist will save you on gas:
- Switch to online billing (saves trips to the post office to mail items and for stamps. Also saves on money for checks!)
- If you don't have direct deposit at work, ask your boss. You'd be surprised at how you may be able to get this set up! If not, save all checks in one specific location in your home so that you only have to make one trip to the bank, and when you do, you'll know that you haven't misplaced or forgotten any checks!
- Buy groceries weekly/biweekly. You'll also find that the less often you go to the store, the less likely you are to splurge on unnecessary items.
- Carpool when possible. My friends and I are big on at least driving to one another's houses and then having the other person drive to an event (and rotating). Helps save on gas and riding together is tons of fun!
Also, be aware of gas stations that have discounts, rewards, etc. For instance, Kroger automatically gives anyone with their shopping discount card (which is free) $.03 off per gallon. Doesn't seem like much but it adds up. And if you loyally shop with them, you can earn up to $.10 off per gallon for your purchases. Plus, they have a fuel card that offers rewards. Definitely something to look into. Other gas stations offer simliar and competite rewards and discounts.
- Keep your tires properly inflated
- Drive the speed limit (it's amazing how much speeding on the highway wastes gas, not to mention puts you at risk for a dangerous accident!)
- Keep your foot off the brake if possible. Keep proper distance and ease up on the accelerator instead of constantly braking. This will not only save you on gas, but also on new brake pads!
- Don't "top off" your tank when filling up. This is actually wasteful of both money and gas, as well as bad for the environment.
- Fill your tank full with each fill up. That way you are heading to the gas station less often than if you only fill up half way.
- Use your cruise control. It is absolutely insane how much gas this will save you.
- Avoid periods of prolonged idling.
- Keep your car well maintained.
Last but not least, don't be afraid to ask your local station if there is a day of the week that they raise prices. For instance, some places raise prices on Thursdays for the start of the weekend, then lower them on Mondays. (This was BIG where I am from in Ohio). Knowing when this happens is crucial - this bit of knowledge could save you big at the pump!

I'll never forget when I realized the miracle of shapewear. Gone were the days of the embarrassing belly bulge in pictures. No more jiggle or feeling self conscious. It was like this miracle secret that I had been let in on and I was hooked.
