Musselman's: Helping to find a cure and get you healthier!

So January is almost gone, and with it, Musselman's campaign to help the National Breast Cancer Foundation.  I truly hope that all of you were able to pick up a jar of their delicious Natural and Healthy Picks Apple Sauce in the pink ribbon package to help support a cause that is near and dear to so many of us!  I apologize immensely for not mentioning this sooner, as most of you are aware that I've have been sick and in the hospital.  Never fear though - we still have until the end of the 31st to make our purchases and help out!

Musselman's has a plan for a healthy New Year called Simple Steps, Big Impact.  I am pleased to say that they were kind enough to include me in this and I would love to share it with all of you!  Included in the plan/gift pack they sent me was a pamphlet from the National Breast Cancer Foundation (nbcf) titled, "What Every Woman Needs to Know About Breast Cancer."  It was divided into 3 major sections:

1. Possible Early Signs of Breast Cancer
2. Early Detection Plan
3. Conducting a Breast Self-Exam

The first Simple Step to improving your health is to have a mammogram in 2011.  You can get information about this, as well as the above topics (and so much more!) on nbcf.org!

Also included in the pack was a jar of Musselman's Natural Apple Sauce.  Not only is it delicious and nutritious all by it's self, but it can also be used in so many ways to help keep you healthy!   Be sure to grab a jar or two in the pink ribbon package by the end of the month; 10¢ from each jar purchased will go to the nbcf!

A second Simple Step you can take this year is to substitute natural apple sauce (like Musselman's!) for the oil in your favorite baked goods. The result is great, moist taste with less fat and calories!  One woman who can really help with this goal is Chef Susan Irby.  Her cookbook, "Substitute Yourself Skinny", contains hundreds of simple substitutions to make your favorite recipes healthier, including using apple sauce instead of oil when baking.  Not only does she help with this, Susan (who has been nicknamed "the Bikini Chef"), helps you cut calorie yet keep the flavor with simple solutions.  I love Susan's take on "dieting" and food in general!  Per her book,

"Diet cookbooks should be about dropping weight, not depriving yourself.  By swapping this for that, you can turn your favorite foods into low-calorie creations- proving once and for all that you can have your molten chocolate cake, and eat it too!"

Well, I hope you all find this information helpful!  I know that National Breast Cancer Awareness month isn't offically until October, but I applaud Musselman's for getting involved, helping to raise money, and most importantly - helping to educate the public and raise awareness!  I especially can appreciate that they tie it in with the New Year and the resolution of being healthier, which is something many of us are working on!

Thursday's Thrifty Meal Idea: French dip made easy and de-lish within minutes!

ThriftyGuy and I know how dinner time during the week can be hectic and stressful.  You want something delicious, quick, easy, healthy, and cheap.  We all know how that can be a tall order to fill.  That's why we like to share great meal ideas to help get dinner on the table in no-time flat, while keeping it delicious, healthy, and wallet friendly.

I love a good french dip sandwich but always cringe at how much time it can take to make one.  Especially a good one.  Until now.  I came across a recipe for a french dip sandwich that is not only super quick and easy, but also mouth-watering-ly delicious!  It can make a meal by itself or pairs well with sides such as coleslaw, macaroni salad, fruit salad, you name it!  This is a great recipe to turn to when you are in a hurry on a busy weeknight!  The recipe says a total time of 20 minutes, but I promise it goes much quicker than that!



Cheddar French Dip Sandwiches
    
Serves:  4
Total Time:  20 min.

Ingredients:

1/4 cup butter, cubed
2 garlic cloves, minced
4 ciabatta rolls, split
1 cup (4 oz.) shredded cheddar cheese
1 lb. thinly sliced roast beef
1 can (14.5 oz.) beef broth

Instructions:

1.  In a small skillet, melt butter.  Add garlic, saute for 1 minute.  Place rolls on a baking sheet; brush cut sides with garlic butter.  Sprinkle with cheese.  Broil 3-4 in. from the heat for 2-3 minutes or until cheese is melted.

2.  In a large saucepan, combine beef and broth; heat through.  Using tongs or slotted spoon, place beef on rolls.  Serve sandwiches with remaining broth for dipping.

*Note:  For added flavor, you may want to spread a bit of low-fat mayo on the rolls.  This recipe was taken from Taste of Home's August/September 2009 magazine.  We kept to the original recipe since it was so easy, quick, and delicious.  To view the original recipe online, please click here.
