Last minute super-quick, easy, &
cheap Super Bowl recipes!

Looking for some last minute super quick, easy, and cheap recipes to make for the Super Bowl today?  Here are a couple that are tried and true per myself as well as family and friends.  Enjoy!

Tuna Ball
(Sounds a bit weird, but trust me, it is delicious!)

Ingredients:
1 (6 oz.) can tuna, drained and flaked
1 (8 oz.) pkg. cream cheese, softened
3/4 cup chopped pecans
1/4 cup chopped onion
Instructions:
1.  In a medium bowl blend tuna, cream cheese, onion, and half the pecans.

2.  Shape into a ball or loaf.

3.  Coat with remaining pecans.

4.  Refrigerate until serving.  Serve with crackers.

Chocolate Chip Cheese Ball
(Tastes like cheesecake!!)

Ingredients:
1 pkg. cream cheese, softened
1/2 cup butter, softened
3/4 cup confectioner's sugar
2 Tbsp. brown sugar
1/4 tsp. vanilla extract
3/4 cup miniature semi-sweet chocolate chips

Instructions:
1.  In a medium bowl, beat together cream cheese and butter until smooth.  Mix in confectioner's sugar, brown sugar, and vanilla.  Stir in chocolate chips.

2.  Cover and chill in the refrigerate for 2 hrs.

3.  Shape chilled cream cheese mixture into a ball.  Wrap with plastic and chill in the refrigerator for 1 hr.  (You can do this as you get to the Super Bowl party and pull it out an hour into the festivities).

4.  Serve with graham crackers.  Try not to eat the whole thing yourself!

Bean Dip
(So good, it'll be the hit of the party!)

Ingredients:
1 can refried beans
16 oz. sour cream
1 pkg. taco seasoning
1 Tbsp. mayo
1 tomato
1 bag shredded cheese
Instructions:
1.  Spread refried beans onto a platter.

2.  Mix sour cream, mayo, and taco seasoning in a bowl.  Spread mixture on top of beans.

3.  Add cheese, tomato and any other toppings you desire.  (We like shredded lettuce, onions, and black olives).

4.  Refrigerate until ready to eat.  Serve with tortilla chips.

Chicken Wings
(Perfected chicken wings that taste just like they serve at the restaurant, only better!!)

Ingredients:
Oil for deep frying
1/4 cup butter
1/4 cup hot sauce (we like Franks)
1 dash ground black pepper
1 dash garlic powder (we usually throw in a couple extra)
1/2 cup all-purpose flour
1/4 tsp. paprika
1/4 tsp. cayenne pepper
1/4 tsp. salt
10 chicken wings
Instructions:
1.  Heat oil in a deep fryer to 350F.  Combine the butter, hot sauce, pepper, and garlic powder in small saucepan over low heat.  Stir together until butter is melted and mixture is well blended.  Decrease heat to low and stir occasionally.

2.  In a medium bowl, mix together flour, cayenne pepper, salt, and paprika.  Dip chicken wings in mixture, coating well.  Shake off excess.

3.  Fry wings in hot oil 10 to 15 minutes or until parts of wings start to brown.  Remove from heat and place in heat resistant bowl.  Pour sauce mixture over wings and toss to thoroughly coat.  Serve immediately.

*Note:  Wings will be on the spicy side.  If you want a healthier version, use boneless skinless chicken breast cut into bite sized chunks.  Brown them in a pan on the stove.  When cooked through, simply add the sauce to the frying pan and coat wings well.  Honestly, not only is this healthier, but we prefer it to the other version.  Just depends if you are craving bar-type wings or "naked"wings.  Either is spicy, de-lish, and sure to please!  : )

Cheesy Beer Fondue 
(So good it hurts!)

Ingredients:
4 Tbsp. butter
1/4 cup all-purpose flour
1 12 oz. bottle lager beer
1/2 tsp. Worcestershire sauce
1/4 tsp. dry mustard
1/4 tsp. cayenne pepper
4 cups shredded cheddar cheese
Beer bread (or other bread of your choosing) for dipping
Instructions:
1.  Melt butter in a medium saucepan over medium heat.  Whisk in flour and cook for 1-2 minutes while stirring constantly to make a roux.  Add beer and bring to slow boil.  Reduce heat and simmer, stirring occasionally.

2.  Add Worcestershire, mustard, and cayenne, stirring occasionally until mixture thickens to the consistency of heavy cream.  Add cheese 1 cup at a time, melting thoroughly after each addition.  Stir fondue until smooth.  Turn into fondue pot and serve with beer bread (or bread of your choosing).  Enjoy!
