Tired of turkey? So were we! ThriftyGuy and I made this recipe last night and boy was it a delicious take on a food we were growing tired of! It's so fresh and scrumptious, it'll have you saying, "More turkey please!"
Juice and grated rind of 1 large limeInstructions:
1 tsp. soy sauce
2 Tbsp. fresh cilantro
1 tsp. ground cumin
2 1/2 cups shredded turkey
6 8-inch flour tortillas
1 medium yellow onion, diced
Garlic (to your taste)
1/2 tsp. Kosher salt
1/2 tsp. coarse ground black pepper
Sour cream (optional)
Shredded Colby & Monterey Jack Cheese (optional)
1. Preheat oven to 325F. Stack tortillas and wrap in foil. As soon as oven is ready, place tortillas in to warm.
2. Whisk together the following ingredients: lime juice and rind, cumin, soy sauce, and cilantro. Toss in turkey and coat well.
3. Heat olive oil in skillet over medium heat. Saute diced onion, garlic (to your taste), Kosher salt, and pepper until onion is browned and soft.
4. Spoon turkey mixture and onion mixture in center of tortilla. If you like, add shredded cheese and sour cream.
